Apple and Ginger Soaup

Makes 4-6 portions
Apparatus
2 cooking apples
1 inch of ginger grated
450g of potatoes roughly chopped
2 tablespoons of olive oil
2 pints of vegetable stock
Blender
Method
1. Heat the oil in a large saucepan
2. Chop the apples, potatoes and grate the ginger and put in the pan
3. Simmer, stirring occasionally for 5-10 minutes to soften everything
4. Add the vegetable stock and simmer for about 15 minutes
5. Transfer to a blender (I had so much I needed to do it in two batches
6. Strain through a sieve to get all the bits of apple/potato skin out.
7. If you want to thin it out a bit add some more water
8. Salt and pepper to taste.
9. Eat. Nom nom nom nom nom.
Conclusion
It was much much sweeter than I thought it was going to be. But it was still yummy. 7/10
